A super simple and a terrific healthy substitute for potatoes is mashed cauliflower.

1 head cauliflower
3-4 cloves garlic
splash of soy milk (can substitute another non-dairy milk)
Peel and chop garlic. Saute until toasted in either a nonstick skillet or with a tiny spritz of olive oil.
Chop cauliflower into florets and rinse. Steam until tender.
Blend or mash cauliflower, toasted garlic and a splash of soy milk together until creamy. I like it with a few small chunks still among the creaminess. You can use a potato masher or a food processor for this.
If you choose, you can also add pepper or other seasonings to taste.
Serve hot as a side or as a base for other dishes.
Bonus: This refrigerates well and can be kept on hand for reheating for several days! We often make a double batch to keep it on hand for easy future meal prep.
